Chicken Broccoli Alfredo Recipe

By Emily Kelley

Ingredients:

  • Rigatoni pasta or your choice of pasta

  • 2 jars Alfredo sauce

  • 1 cup of parmesan cheese

  • Salt and pepper

  • Broccoli

  • Grilled chicken

  • Olive oil

  • Garlic powder/garlic paste

  • ½ onion

Instructions:

1.Boil the pasta. If you dont know how to boil pasta, I am very concerned.

2. Chop the chicken into small chunks and set aside.

3. Chop the broccoli and set aside.

4. Chop the onion into slices, then add to a pan and caramelize. To caramelize the onions, first heat a splash of olive oil in the pan. Once heated, throw in the onions and add a splash of sugar if desired to speed up the caramelization process. Keep the heart on medium or lower as needed and stir occasionally. Be sure not to stir too much so as to not disrupt the browning process, but stir just enough to prevent the onions from burning. Cook until all onions are browned. Set aside.

5. Stir fry the broccoli until just lightly browned, then remove from heat. This should be a very quick stir fry-no more than 3-4 minutes, or until just lightly browned.

6. Pour the alfredo sauce into a pan and heat. Mix in parmesan cheese and stir so parmesan melts in. Sprinkle pepper and garlic powder LIGHTLY and mix in. If using garlic paste, one light squeeze of the tube, or about a quarter size drop, will be sufficient. Squeeze in and mix in.

7. Pour the pre-cooked grilled chicken into the pan with the sauce and coat, letting heat.

8.Once pasta has boiled, strain and pour over sauce and chicken. Mix together and enjoy very, very much! :)
